Instructions

1: Prepare the Batter

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the butter, honey, and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Gradually add the dry ingredients, alternating with the buttermilk, beginning and ending with the flour mixture.
  6. Gently fold in the diced peaches.

2: Bake the Cupcakes

  1. Fill each cupcake liner about two-thirds full with batter.
  2. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

3: Make the Cream Cheese Frosting

  1. In a large bowl, beat the cream cheese and butter together until smooth and creamy.
  2. Add the powdered sugar, one cup at a time, beating until fully incorporated.
  3. Mix in the vanilla extract and honey until smooth.
