A classic and comforting recipe for delicious banana bread, perfect for using up ripe bananas.

- 1 and 3/4 cups (220g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (225g) mashed ripe bananas (about 2–3 medium bananas)
- 1/2 cup (60g) chopped walnuts or pecans (optional)
- 1/2 cup (85g) chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Add the mashed bananas to the wet ingredients and mix until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- If using, fold in the chopped walnuts/pecans and/or chocolate chips.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve.
Notes
- Use very ripe bananas (with brown spots) for the best flavor and sweetness.
- For extra moisture, add 1/4 cup of sour cream or plain yogurt to the batter.
- Store leftover banana bread at room temperature in an airtight container for up to 3 days, or in the refrigerator for up to a week.
- Banana bread freezes well for up to 3 months. Wrap tightly in plastic wrap and then foil.
