Ingredients

  • 1 and 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (225g) mashed ripe bananas (about 23 medium bananas)
  • 1/2 cup (60g) chopped walnuts or pecans (optional)
  • 1/2 cup (85g) chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Add the mashed bananas to the wet ingredients and mix until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. If using, fold in the chopped walnuts/pecans and/or chocolate chips.
  8. Pour the batter into the prepared loaf pan and spread evenly.
  9. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  11. Slice and serve.

Notes

  • Use very ripe bananas (with brown spots) for the best flavor and sweetness.
  • For extra moisture, add 1/4 cup of sour cream or plain yogurt to the batter.
  • Store leftover banana bread at room temperature in an airtight container for up to 3 days, or in the refrigerator for up to a week.
